Hello! I found your shop from an IBS article. Out of the two varieties of "Garlic" products you sell, which do you recommend to be closes to garlic? I deeply miss cooking with it (it's in so many Asian dishes which I grew up on) but have been suffering with IBS for several years. I understand your description says this is "sweeter" which concerns me because I don't care to make my foods sweeter, preferring savory tastes. Would the Onion variety be better? Thanks!

Hi Lin! I'd say all 3 powders are savory, no "sugar sweet" vibe by any means. However, I do think the garlic scape has more other flavors going on from maybe like a sweet grass, to onion, to asparagus, to soft garlic. My gut tells me to have you for the garlic chive powder though. Most people asking a question similar to yours tend to prefer that one -- it's made simply from drying and powdering fresh garlic chives, an "herb" that's very common in Asian dishes but hard to find fresh in U.S. stores. Do I need to store the bottle in the refrigerator once it is opened?

Hi Jody - we suggest NOT storing in the fridge, it'll probably add unwanted moisture to the bottle. You can just store with other spices in a cabinet!

How would we use garlic scape powder to substitute for garlic powder in a recipe? Is it a 1 tsp for 1 tsp substitution or do we need to use less/more garlic/scape powder? I have only used fresh garlic scapes and use them much like scallion tops as flavorful garnish, lightly sautéed with veggies, folded into spreads, or added at the end of longer cooking dishes like stews.

Hi Melissa - it's really a different ingredient. We find garlic scape powder to be more mild and sweeter than garlic powder itself. Your ideas above sound perfect - these are freeze dried and powdered, so once added to something with moisture, it's sort of like little pieces of fresh garlic scape. When sautéing into various things, it acts more like a spice / dried herb. Adding to a marinade or into a rub is great too. As for ratio, because it's a different taste and ingredient for your cooking routine, really, it's not really comparable. If you are following the low FODMAP diet, we recommend sticking with the recommended low FODMAP serving size of 1/4 tsp per person to start. While a little more that that is likely "safe", at high levels, you'll get some fructan levels even with this ingredient. Hope that helps!
