After searching for genuine guanciale and only finding it being sold for between £9-12 for a 200-300 gram 'bit', without any real proof of origin, I thought, no, let's do this properly. This is the second one I've ordered and as soon as my son finds out, almost half of it is gone! I also share it with friends that have used lardons and pancetta when making a carbonara, but now I let them know if I'm gonna order again. The quality and taste is just exceptional, it really is, as is the price and speed of delivery.
